I came up with this recipe on Saturday night when I had left over limes and mint leaves from when I made “regular” mojitos for our guests a few nights prior. I felt like jazzing up the regular recipe, so I decided to add some cantaloupe in my mojito as well. According to the hubs, my melon mojito got 2 thumbs up! And the best part is that’s it low-cal because there isn’t any regular cane sugar. Check out the recipe below!
Low-Cal Melon Mojito
2-3 fresh mint leaves
1/2 fresh squeezed lime juice
3-4 tablespoons of cantaloupe
2 teaspoons of Stevia sweetener
1/2 can club soda
1 shot of clear Bacardi rum
handful of ice
1) Place the mint leaves, lime juice, cantaloupe, and Stevia into a glass.
2) Use a muddler (or handle of a wooden spoon) to crush all ingredients as best you can.
3) Add the club soda, Bacardi, and ice, and stir.
4) Serve and enjoy!
